The variety that remains closest to the ancestral wild cabbage, and also tastes the worst in the opinion of many, is kale or collards. Kale doesn’t do much except grow lots of leaves, which are eaten in the spring. Kale is very hardy and can produce a crop at a time when there is very little else in the vegetable garden.
