“When I found out that Manchester didn’t have a Michelin-starred restaurant, I just had to try to get one,” says Mr Bacon. Just to put the sort of food we’re serving on a plate costs a lot of money. With 500 to 600 covers a week, we’ll be profitable. But ultimately, it’s just something I really wanted to do for myself.”
